Comfort Soup for Chilly Days!
My chicken vegetable soup recipe for cold days. 3 chopped boneless chicken thighs; 12 oz box of vegetable or chicken broth (I prefer veggie broth for a richer taste. I also use low sodium broth to make it healthier. Three chopped carrots; 1-2 small potatoes cut into small chunks. Diced tomatoes (1 medium fresh or 14 oz can), medium onion diced; 2 tsp minced garlic; one stalk of green onion finely chopped; hot sauce to taste; if you like add green beans but I don’t. Bring to a boil and then simmer for 1 hour on medium heat or at 300 – 325 degrees in a slow cooker
